The Twins Guide to Cooking With Tallow

The Twins Guide to Cooking With Tallow

You Are What You Eat.

Okay, we’re bossy. First we’re telling you to rub beef tallow on your face- now we’re telling you to cook with it. But, we're bossy for good reason (we want to help you live better & look better)! Let us introduce you to your new fave kitchen staple. Tallow is rich, versatile, and has been making waves in the wellness world for its incredible health benefits.

What is Tallow?

In case you forgot: tallow is rendered beef fat that’s solid at room temperature and melted into liquid when heated. It’s not just a throwback to the days of old-school cooking; the benefits of cooking with tallow include a high smoke point, making it perfect for frying and sautéing. Plus, it’s packed with healthy fats that can support skin health, improve digestion, and add a deep flavor to dishes. (Think buttery richness but with extra nutrition).

Why Cook with Tallow?

For those who want to stay away from processed oils, beef tallow cooking is the perfect alternative. Here's the deets:

High Smoke Point: Unlike vegetable oils that break down at high heat, tallow can withstand the hottest sear without turning into harmful compounds.

Nutrient Dense: Loaded with fat-soluble vitamins like A, D, E, and K, tallow benefits for cooking extend beyond flavor and into the realm of nutritional powerhouse.

Keto & Paleo Friendly: For anyone following a low-carb lifestyle, tallow is a dream for adding satiating fats to meals without the insulin spike.

How to Cook with Tallow

Tallow is incredibly easy to incorporate into your meals. Recipes using tallow range from fried delights to roasted veggies. Use it as a substitute for oils in:

  • Frying or roasting potatoes for that crispy finish
  • Sautéing greens or veggies
  • Sealing in juices for meats (tallow pan-seared steaks are unmatched)
  • Baking savoury pies or pastry crusts for added depth of flavour

Now that you know why you should be cooking with tallow, let’s put our yapping to good use. Here is the twins favourite tallow french fry recipe.

Crispy Tallow Fries Recipe

Ready in 30 minutes – serves 4

Ingredients:

4 large russet potatoes

½ cup grass-fed beef tallow (rendered)

Sea salt to taste

Fresh herbs (like rosemary or thyme) for garnish

 Directions:

Prep the Potatoes: Peel (if you prefer) and cut your potatoes into thick wedges or shoestring fries for a crispier bite.

Heat the Tallow: In a heavy-bottom skillet or cast-iron pan, melt the beef tallow over medium-high heat. Make sure you have about ¼ inch of melted tallow in the pan.

Fry Away: Once the tallow is hot, carefully add your potato pieces, making sure not to crowd the pan. Let them fry for about 5-7 minutes per side or until golden and crispy.

Drain and Season: Use a slotted spoon to transfer the fries to a paper towel-lined plate. Immediately sprinkle with sea salt and fresh herbs for a burst of flavor.

Serve & Enjoy: These fries pair perfectly with a garlic aioli, homemade ketchup, or even a side of roasted veggies for a well-rounded meal!
